Chicken Satay Burger with Coconut Lime Rice

Make the burgers: 2 patties per serving. Saute the spinach and season with a little salt. Then combine with the other first 4 ingredients and make a tiny sample burger to test seasoning. Make sure its tangy and a little salty. Then make the sauce by combine the following 9 ingredients. Add a little coconut milk to the sauce if needed. Last, make the rice by sauteeing the cauliflower rice with coconut milk, garlic and onion and salt. Then add lime juice. Be sure to not over cook the rice. It should still be a little al dente. Package with rice on the bottom then burgers topped with a little sauce on top, garnish with cilantro.
